Fruit Pizza

Cooking with Your Kids - Fruit Pizza

"Finding fun and yummy recipes for my children are what keeps them loving me and Fruit Pizza is no exception! This recipe is delicious for any age but is especially fun if you want a little helping hand. When my kiddos help me cook something up, they just can't wait to taste it!

INGREDIENTS:

  • 1 roll frozen sugar cookie dough (buy it or from scratch)
  • 8 oz. cream cheese, softened
  • 1 c. sugar
  • 4 Tbsp. juice
  • Fresh fruit of your choice (can be canned but drained) You could also use the juice from this for your 4Tbsp. of juice.
  • Nuts, coconut, or marshmallows (optional)

DIRECTIONS:

Soften and spread dough to fit 9×13 cake pan or pizza pan. Combine cream cheese, sugar, and juice. Spread over cooled cookie dough. Sprinkle with fruit of your choice. (Optional: Add nuts, coconut, or marshmallows on the top) Refrigerate and serve cold!"

Laura, I thought this might be a fun dessert for Spencer to enjoy. Besides, it's pizza and you are in Italy! Darn it, come home soon!

Mini Candy Apples

I found this recipe* that you kids might enjoy making sometime.

"T
hese Mini Candy Apples are the perfect size for children to eat and easy enough for them to make all on their own.

1. Cut all your lollipop sticks in half, you can find these in the candy/baking section of most craft and major grocery stores.

2. Collect the rest of your ingredients: Apples, Melon Baller, Cupcake Liners, Dips and Toppings. For the dips we used melted almond bark, chocolate chips, butterscotch and caramel. For toppings we used different types of sprinkles and nuts.

3. Scoop out a ball of apple with your melon baller and insert the halved lollipop stick into the apple piece. Dip the apple ball into whatever melted dip you want and then dip into the topping!

4. Set in a cupcake liner for toppings to set for a few minutes."

Chocolate Mug Cake

Note to moms...I think this is something all the grandkids would love and could possibly make themselves with supervision! I am excited about this for Spencer, especially!

FIVE MINUTE CHOCOLATE MUG CAKE

4 tablespoons flour
4 tablespoons sugar
2 tablespoons cocoa
1 egg
3 tablespoons milk
3 tablespoons oil
3 tablespoons chocolate chips (optional)
A small splash of vanilla extract
1 large microwave safe mug

Add dry ingredients to mug, and mix well. Add the egg and mix thoroughly.Pour in the milk and oil and mix well. Add the chocolate chips (if using) and vanilla extract, and mix again.

Put your mug in the microwave and cook for 3 minutes at 1000 watts.
The cake will rise over the top of the mug, but don't be alarmed!
Allow to cool a little, and tip out onto a plate if desired.
EAT! (this can serve 2 if you want to feel slightly more virtuous)
